Rolled Pork Roast

Rolled Pork Roast

3 to 6 lb pork roast
1 can (15oz) sauerkraut; drained
prepared mustard to taste
salt & pepper to taste
1 small jar raspberry jam; optional

Using an electric knife; fillet the roast as you roll it out thinner and thinner (like a jelly roll). Pound it flat; season with salt and pepper; smear mustard over; spread sauerkraut evenly over all. Roll up roast and tie with string. Place uncovered in a baking dish and cook @ 350°F for 90 minutes. Remove roast to cutting board. Cool slightly and cut into 1-1/2" slices to serve. Meanwhile mix jam with pan juices and let melt together to serve over roast.
