By 5 Potato Salad

1/2 lb bacon
4 tablespoon bacon drippings
8 each potatoes
1 cup celery; sliced
2 each onions; grated
2 tablespoon lemon juice
1 teaspoon sugar
1 teaspoon prepared mustard
1 1/2 cup mayonnaise
1 1/2 tablespoon vinegar
1 teaspoon salt
1/2 teaspoon pepper
Fry bacon until crisp, reserving drippings. Crumble. Cook potatoes in covered pan of salted water for 30 min. Drain, peel, cube. Mix bacon, drippings, potatoes, celery and onion. Add lemon juice, salt, pepper, sugar. Fold in mustard, mayo, and vinegar. Opt: Add 4 hard boiled eggs, chopped.
Note: "By 5" named for 5 recipes being combined to make 1 good salad.
