Wild Rice 'n Green Bean Casserole

3 cups cooked chicken; (opt) cubed
1 pkg. chicken & wild rice mix; aka: Uncle Ben's
1 can cream of celery soup; undiluted
2 cans french-style green beans; drained
salt & pepper to taste
1 can water chestnuts; (opt) drained/diced
COOK the wild-n-white rice mix according to package directions. Mix all ingredients & pour into 2 1/2 -3 quart baking dish. Bake uncovered 25-30 minutes @ 350°F.
(Subst: 1 can of whole kernal corn for one of the green beans. Add the cooked chicken for a hearty casserole; the water chestnuts for some texture contrast. Or top with prepared stuffing mix or french fried onions. TO FREEZE: do not cook before freezing.)

Chicken Spectacular: Cora F Watford "CULINARY TREASURES" says add: 1 med onion diced & 1/2 cup of Mayonaise.
(Note: I use this often (without the chicken) as the perfect side dish to any meat entree... 2 dishes and suppers on the table)
