Chicken Parmesan

Chicken Parmesan

1 sleeve saltine crackers; crushed
3/4 cup grated parmesan cheese
12 chicken thighs; (or 6 breast)
1/2 cup butter; (1 stick) melted

Mix crumbs and cheese. Dip chicken into melted butter; roll in crumb mixture. Place in 8-1/2x11 baking dish. Bake, uncovered, at 350°F for 1 hour.

(Author: try pouring leftover butter over the crumbed chicken; or adding spices of your choice)

Excellent: served with Macaroni & Cheese, baked beans and a biscuit.

Note: place saltines in a 1 gallon Ziploc and crush with a rolling pin.
