Italian Pasta Potpourri

Italian Pasta Potpourri

1 lb Italian sausage; or breakfast links
1 cup mushrooms; sliced fresh
1 tablespoon oil; salad
8 8 oz pkg spaghetti; thin
2 large eggs
1/2 cup parmesan cheese; (3 oz pkg)
1/4 cup milk
1 teaspoon salt
1/4 teaspoon garlic powder
1/4 cup butter

Cook pricked sausage 20 minutes over med heat in 1/2" water in uncovered skillet. Drain, cut 1" pieces, set aside. Clean skillet, saute mushrooms in oil for 3 minutes, set aside. Cook spaghetti according to pkg directions, drain. In small bowl, beat eggs, cheese, milk, basil, salt, and garlic powder. Return spaghetti to its pot, toss with butter till melted, add sausage, mushrooms and egg mixture. Toss gently and serve immediately.

(opt: increase milk to 1/2 cup for a smoother sauce)

Try: mixing with rice instead of pasta.
