Cornbread

Cornbread

1 cup cornmeal; (white)
1 teaspoon salt
3/4 cup milk; or buttermilk or water
3/4 teaspoon soda; omit if using buttermilk
1 large egg
1 tablespoon lard, bacon drippings, or shortenin
1 teaspoon Baking Powder; optional
1 teaspoon sugar; optional
1 teaspoon red pepper flakes; optional

Mix cornmeal with milk and set aside 1/2 hour. Add egg, salt, soda and stir. Add grease. Pour all into a greased cast iron skillet and bake @350°F for 35-40 minutes.

(opt: preheat skillet very hot; pour in batter and bake at 350°F for 25-30 minutes)

(opt: add chopped jalapeno to batter or increase red pepper to 1T)

Serves 4 to 6 and can double all but the egg.
