Beef Enchiladas

1 lb ground beef; browned and drained
1 pkg taco or burritto seasoning mix; (I use 1/2)
1 can refried beans
1 can cheddar cheese soup; undiluted
1 medium onion; chopped
1 cup cooked rice (optional)
large flour or corn tortillas; (about 10-12)
shredded cheese; (about 2 cups)
enchilada sauce; (or small jar picante)
Brown ground beef and drain. Add seasoning mix according to pkg. directions. Stir in beans, soup, onion and rice.
Spoon beef mixture into tortillas. Roll up and place seam-side down in baking dish. Pour some enchilada sauce over tortillas and sprinkle with cheese.
BAKE at 350°F. about 20 min. or until cheese is melted. Serve with red rice and whole kernal corn.
