Banana Coconut Muffins

1 1/4 cups all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
2 medium very ripe bananas; ~ 3/4 cups
1 stick unsalted butter; melted
2/3 cup sugar
1 large egg
1/2 teaspoon vanilla
3/4 cup sweetened flaked coconut

LINE muffin tin with 8 paper liners

Put oven rack in middle position and preheat oven to 375°F.

Whisk together flour, baking powder & salt in a bowl.

In another bowl, whisk bananas, melted butter, sugar, egg, vanilla & 1/2 cup coconut until combined well. FOLD in flour mixture until moistened.

Pour batter in lined muffin cups about 1/2 to 3/4 way up:: sprinkle each with remaining 1/4 cup coconut ( I've also sprinkled a tad of sugar on top). Bake until muffins are puffed and golden, about 25 minutes. Transfer muffins to a rack and cool slightly. Makes 8. -DJ
