Chicken Skillet Stroganoff

Chicken Skillet Stroganoff

6 chicken pieces; skinned
1 cup tomatoe juice
1 can (4 oz) mushrooms; drained (reserve liquid)
1/3 cup onion; finely chopped
1 tablespoon parsley flakes
1 teaspoon salt
1 teaspoon garlic powder
2 teaspoon cornstarch
2 tablespoon water
1/2 cup sour cream

Cook chicken in a little oil until brown. Pour tomato juice and reserved mushroom liquor over chicken. Stir in onion, parsley, salt, and garlic powder. Cover and simmer 50 to 60 min.

Stir in mushrooms and cornstarch mixed with water. Cook, stirring constantly, until thickened. Stir in sour cream, stir and simmer one minute.

Serve with white rice or buttered noodles.
