Boiled Peanuts

Boiled Peanuts

1 peck green peanuts; (1/4 bushel)
3/4 cup salt

Start with the freshest raw peanuts you can get, do not shell. Place in sink and rinse clean. Place peanuts into a large stock pot and cover with water (twice the volume of water to peanuts). Turn stove on high and boil for 2 hrs. Remove from heat and add salt and let soak for at least 3 hrs or overnight.

(note: white peanuts are preferred to spanish red peanuts; green peanuts are fresh out of the ground and treated like a perishable vegetable; raw peanuts have dried to varying stages and will require considerable more time to cook, 3-4hrs.)

(subt: 1/3c salt to 3 lbs peanuts)
