Pineapple Upside Down Cake

Pineapple Upside Down Cake

1/4 cup butter; 1/2 stick
2/3 cup brown sugar
1 can (20 oz) pineapple slices
10 maraschino cherries
1 1/2 cups all purpose flour
3/4 cup sugar
1 1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 cup milk
1/4 cup shortening
1 large egg
1 tablespoon lemon juice
2 teaspoon vanilla extract

Melt butter in a 10" cast iron skillet, stir in brown sugar until melted. Remove from heat. Drain pineapple, reserving 2 tblsp of syrup. Arrange slices in sugar mixture to cover the bottom of the pan (can overlap. Place a cherry in each slice's center.

Combine flour, sugar, baking powder, salt, milk and shortening, beat 2 minutes. Add egg, reserved syrup, lemon juice and vanilla, beat 2 minutes. Pour over pineapple in skillet.

Bake at 350°F for 40 minutes. Let cool for 5 minutes and invert onto a serving platter.
