Blueberry Cheesecake

Blueberry Cheesecake

2 graham cracker crust (8 or 9 in)
3 8 oz pkg cream cheese; softened
3/4 c sugar
3 large eggs
1 t vanilla extract
1 21 oz can blueberry pie filling

Combine cream cheese and 3/4 cup sugar at medium speed until well blended. Add eggs, one at a time, mixing well after each addition. Blend in vanilla. Pour over crust. Bake at 325 degrees for 40 minutes. Chill 24hrs. Top with pie filling before serving. Opt: Serve with whipped cream.

Opt: Make a crust - Combine 1 cup Graham cracker crumbs, 3 tablespoons of sugar and 3 tablespoons of margarine. Press into bottom of a 9 inch pan. Bake at 325 degrees for 10 minutes. Let cool.

Opt: Pie filling - Drain #2 can of blueberries. Pour juice in a saucepan with 1/4 cup water, 1/4 cup sugar, 2 tablespoons cornstarch, and 1 tablespoon lemon juice. Cook until thick. Remove from heat. Add berries to the sauce and spread over baked mixture. (Double for 2 pies)
