Lollipops

2 cup sugar
2/3 cup corn syrup; light
3/4 cup water
1 teaspoon candy flavoring
1 single powdered sugar (opt)
1 single food coloring (opt)
Mix sugar, syrup, and water in a large saucepan. Stir over medium heat until sugar dissolves. Boil, without stirring, until temperature reaches 310 deg or until drops of syrup form hard, brittle threads in cold water. Remove from heat. After boiling has ceased, stir in flavoring (use oils for candy making or lemon extract) and food coloring. Pour into lollypop molds, cool, and store in freezer if desired. Can pour out onto lightly greased cookie sheet. Cool slightly, dust with powdered sugar, cool completely, then break into pieces. Store in airtight containers.
