Red Rice #2 (baked or stove-top)

1/4 lb bacon
1/2 large onion; chopped
1/2 medium bell pepper; chopped
1 cup water
1 can (8 oz) tomato sauce
1 teaspoon brown sugar
1 teaspoon salt
1 cup long-grain white rice; uncooked
Fry bacon crisp and crumble. Saute onion and peppers in the bacon grease. Add water, tomato sauce, sugar and salt. - Pour into a 9x9 baking dish, stir in rice, cover with foil and bake @350°F for 1-1/4 hours. or - Bring to a boil and add the rice, cover tightly, reduce heat to very low, and simmer for 20 minutes.
(can increase both rice and water to 1-1/3 cups each)
Serves 4 men.
