Thanksgiving Turkey

Thanksgiving Turkey

1 10 - 16 lb whole turkey; fully thawed
lemon juice
greek seasoning
1/2 cup butter or margarine; (1 stick)
1/2 cup oil

Preheat oven to 325°F. Line roasting pan with foil for easy cleanup, oil the rack, pour some lemon juice and 1/2 cup water into bottom of pan. Count on bird taking about 4 hours to cook.

Rub seasonings inside and out. Truss the bird with string. Place breast side down and drizzle with lemon juice. Cook 15 min/lb (12 min/lb if > 16 lbs). Turn breast side up after 1 hour (1-1/2hr if > 12 lbs). Baste every 30 min with a mixture of butter, oil and seasonings.

If browning too fast, cover loosely with a tent of buttered foil.

(Subst: seasoned salt and lemon pepper for the greek seasoning) (Leftovers: make turkey tetrazzini)
