Chicken Tetrazzini (or Turkey)

1 whole chicken, cooked; deboned and shredded
12 oz spaghetti; cooked (8 to 16oz)
2-3 stalks celery; sliced
1 medium bell pepper; chopped
2 medium onion; chopped
1 stick butter
2 can (10.5 oz) cream of mushroom soup; undiluted
3/4 lb cheddar cheese; grated (3 cups)
1 can (12oz) evaporated milk

Boil chicken in pot covered with water until done (1 hr). Remove chicken, reserving liquid. Boil spaghetti in reserved liquid per pkg directions, drain. Saute vegetables in butter until browned. Combine shredded chicken, vegetables, cooked noodles, soups and evaporated milk. Season to taste. Layer in a 2 to 4 qt casserole - cheese, mixture, cheese, mixture and top with cheese. Bake at 350°F for 45 minutes uncovered.

Opt: add mushrooms, sour cream or parmesan. Can be frozen.
