Crisp Watermelon Rind Pickle

1 each large watermelon rind
1 quart vinegar
5 lb sugar
1 oz stick cinnamon
1 oz cloves; (tie in cheesecloth)
1/2 oz powdered lime per gal water

Prepare rind by removing all green and red. Cut into desired shape. Soak overnight in lime water. Drain, without rinsing. Cover with water and boil for 1 hour. Make a syrup from vinegar, sugar, cinnamon and cloves. Drain rind cover with syrup. Boil 1 hr or until rind become translucent. Seal in sterilized jars. Process in boiling water bath. (Subst: 1 T Pickling Spice for cloves)
